{Recipe} Laksa Seafood Pancake
Inspired by the Korean kimchi pancake, this laksa seafood pancake is spicy and delicious thanks to New Moon Laksa Paste which is full of oomph and kick. I used the king top shell which is a good source of protein as it is actually low in fat and trans-fat free. Feel free to add prawns or squid to your liking.
Ingredients (Makes 2 large 20-cm pancakes)
2 Tb Sesame Oil
1 medium sized red pepper, sliced
2 stalks thai spring onion, cut into about 5-cm in length
1 New Moon Braised King Top Shell, cut each slice by half
1 cup all purpose flour
1/4 cup corn starch
40g New Moon Laksa Paste
200ml water (feel free to use coconut milk)
1 tsp white sesame, toasted
For the dipping sauce:
2 Tb soy sauce
2 Tb white rice vinegar
Method
1. In a large bowl, combine the flour, corn starch, water and laksa paste till well-combined. Add in spring onion, red pepper and braised king top shell slices.
2. Heat a nonstick or cast iron pan over medium high heat. Add 1 tablespoon oil and add the batter to the pan, spreading it in an even layer. Fry until browned on one side. Flip the pancake and continue to cook until browned on the other side.
3. Assemble the dipping sauce by combining the sauce ingredients in a small bowl. Serve alongside the pancake.

最近在研究米布丁,由於顧問了一間飯糰店 🍙
正是夏天,芒果滿街都是,逛一趟市場都能聞到飄散在街道上的芒果香氣🥭
不知要做什麼還是不自覺買了兩斤回來,後來想到芒果🥭,想到米飯🍚,接著又想到椰奶 🥥
於是,做一個 #芒果椰奶米布丁 的念頭就出來了
嘗試了幾次之後找到了黃金的配方
煮熟米飯1公斤
鮮奶 800公克
奶油 100公克
二砂糖 150公克
好的鹽巴 10公克
香草精 5公克
煮滾之後慢慢收乾,狀態跟很稀的燉飯差不多,煮好之後攤平倒在平盤上封上保鮮膜進冰箱冷卻約一小時(記得要平!)
接著切芒果丁,跟萊姆皮萊姆汁與少許五香粉混合
再來把一整罐 #小磨坊 的椰奶與削下來的芒果皮煮滾後,過濾取出的椰奶進冰箱冷卻
最後把冷卻好的米布丁與椰奶混合,接著加入100公克打發的鮮奶油即可與切丁的芒果一起擺盤🤙🏿🤙🏿🤙🏿

I still remembered when I was in London and I laid 7 pounds for a piece of way below average standard mango 🥭
Back here in Taiwan 🇹🇼 the quality of mango is amazingly nice, the fragrance of it is very unique from other fruits. And the sweet and sour taste of it is balanced and the texture is soft and it just melts in your mouth.
Anyway it really is sth that we Taiwanese expect on a hot summer day, we put it on shaved ice with condensed milk, make fruit tea out of it, layered cake with it and loads of cream.
Now I’m running a Onigiri 🍙 shop in Taipei and I was wondering wht kinda dessert can I make with rice. And the idea of this coconut milk rice pudding with mango popped right in to my mind.
I diced up the mango and mix it with lime zest & juice, and the secret is to put a sprinkle of 5 spice to give it that nice aroma. Rice is from the east part of Taiwan, short grain and stored in fridge for over an year. The. Simply boil with sugar/salt/vanilla/butter and cook just like risotto but a bit runny.
Then out in a tray and cooled to core temp at around 8-10 (easier to combine with whipped cream and coconut milk).
The skin and pit of mango I don’t waste, I boil with coconut milk to extract the mango flavor and then just combine cooled rice and mango together.
Simple but full of details, defoly worth a try 🤙🏿🤙🏿🤙🏿

Copying and practicing a recipe from a famous restaurant is the most challenging thing, but it is very interesting and we learn new things from it. In this video, we copied the taste of the famous pepper ribs, but made some modifications, because some ingredients are not found in this city. Chili’s slow-cooked pork ribs has been a top seller on the menu since 1986 and is still the best seller today. So this is a must try.
To make smoked flavor BBQ ribs without a smoker, we slow cook in the oven, and make the Chili's BBQ sauce with smokey chipotle in adobo, or it can be made by liquid smoke instead. The flavor is found in the sauce, and the cooking secret is slow-braising which can keep the meat juicy and tender like the original. You can use the barbecue sauce suggested in the recipe below or use your favorite homemade or store-bought sauce. Hope you like it. Enjoy. :)

How to make Oven-Baked Smoked BBQ Ribs
✎ Ingredients
pork ribs 950g
☞ for dry marinades
coarse salt 70g
black pepper 15g
ground white pepper 4g
cayenne pepper 2g
granulated sugar 3.5g
garlic powder 1.5g
onion powder 1.5g
☞ for BBQ sauce
chipotle peppers in adobo 7g
regular soy sauce 32g
tomato paste 70g
ketchup 20g
chicken broth 30g
apple cider vinegar 35g
dark beer 45g
fresh orange juice 87g
minced garlic 10g
chili powder 1.5g
onion powder 5g
salt 3g
black pepper 2.5g
light brown sugar 130g
1. Combine together coarse salt, black pepper, ground white pepper, cayenne pepper, granulated sugar, garlic powder and onion powder, mix well.
2. Line a baking tray with foil or parchment paper.
3. Place the ribs on the baking tray, pat dry the ribs with paper towels on both sides.
4. Using a sharp knife to take off excess fat. Just keep a little fat.
5. Remove the silver skins or whitish dense skin on the bone side of the ribs.
6. Then turn the meatier side facing up, generously season with 1 tablespoon of dry marinades.
7. Cover with another foil, shiny side out.
8. Preheat the oven to 135C, bake for 2.5~3 hours.
9. While the ribs bake, make the barbecue sauce. Add all the sauce ingredients together, using an immersion blender to blend the ingredients until smooth. Pour into a saucepan and cook over medium-low heat for 15-20 minutes, stirring often until thicker.
10. Once baked, remove foil and transfer to a new baking tray and brush ribs with the barbecue sauce on both sides. Let the bone side facing up.
11. Preheat the oven to 220C, bake for 5 minutes, then turn the meatier side facing up and brush a little bit of sauce and bake for 10 minutes or until ribs have been caramelized.
12. Transfer the ribs to a plate or a cutting board, brush with sauce again if needed and serve.

大好きな昭和の香りのする「あんドーナツ」を作りました。
生地は薄力粉とベーキングパウダー、卵、砂糖の4つ。
お菓子作りの基本形みたいな感じです。
今ほど和菓子も洋菓子もバラエティーに富んでなかった頃、「あんドーナツ」は3時のおやつには最高のスイーツだったはず!
昔のおやつも作って食べてみると、その素朴な味にすこし人間らしくなれるような気がします^^
敢えて不便な生活を楽しむように、昔のおやつも手作りしてみると違った感覚が戻ってくるのが面白い!

【Ingredients】make 10 cakes
40g Whole egg
40g Cane sugar
110g Cake flour
Baking powder 2g
200g Tsubu-an’(Sweet Azuki Paste)
*Oil for frying

【Directions】
①Roll the ‘Tsubu-an’ (Sweet Azuki Paste) into small balls.
②Combine Eggs and Sugar in a bowl and stir.
③Sift cake flour, baking powder together and mix .
④Cut dough into 10 pieces and make them round.
⑤Flatten of the dough and place one ball of Azuki paste in centre and draw the edges up to enclose.
⑥Heat Oil to about 160°C~170℃ and deep-fry doughnuts until puffed and golden each side.
***Keep the temperature of the oil about 160 to 170°C.
⑦Coat doughnuts with Sugar.

まぶす用のきび砂糖 適量
【作り方】
①粒あんは丸めておく。
②ボウルに溶いた卵と砂糖を入れて混ぜる。
③薄力粉とベーキングパウダーをふるい入れて混ぜる。
④打ち粉をふったまな板の上などに生地を取り出し
カットしやすいように棒状にし、10等分にして丸める。
***きっちり作りたいときは、重さを量ってから10等分にしてください。
⑤生地を平らにして、中央に粒あんを置き、端を引き上げるようにして包む。
***ひだ状に重なる部分を指で押しながら綴じるようにすると、全体の厚みがそろうようになります。
⑥油を160℃~170℃に熱し、ドーナツの表面が膨らみ、黄金色になるまで揚げる。
***油の温度は160℃~170℃をキープします。
あまり高い温度で揚げてしまうと生地が焦げてしまってすぐに黒くなりますので、注意です。
⑦揚がったら油を切り、熱いうちに砂糖をまぶす。
***冷めてしまうと砂糖がくっつかなくなるので、3個くらいずつ、ゆっくりと揚げて砂糖をまぶすを繰り返すのが理想です。
●あんこはお好みのものでどうぞ。
白あん、こしあん、抹茶あんなど。
●少ない油だと油の温度の上がるのが早いです、こまめに調整してください。
●お砂糖もお好みのもので。

上白糖、グラニュー糖でもどうぞ。

■トマトソース
オリーブオイル 大さじ2
玉ねぎ(みじん切り) 1個
パプリカ(みじん切り) 3個
にんにく(みじん切り) 4片
なす(みじん切り) 455g
ズッキーニ(みじん切り) 中2本
かぼちゃ(みじん切り) 中2本
トマトペースト 340g
オレガノ 大さじ1
タイム 大さじ1
カットトマト 795g
■チーズソース
リコッタチーズ 850g
細切りモッツァレラチーズ 100g
バジル(刻んでおく) 10g
パセリ(刻んでおく) 20g
卵 1個
■スライス野菜
なす(スライス) 2本
ズッキーニ(スライス) 2本
かぼちゃ(スライス) 2本
ローマトマト(スライス) 6個
にんにく(みじん切り) 2片
タイム 大さじ1
オリーブオイル 大さじ2
ラザニア 8枚
塩 少々
コショウ 少々
作り方:
1. オーブンを200°Cに予熱しておく。
2. トマトソースを作る。中火でフライパンを熱してオリーブ油をひく。玉ねぎ、パプリカ、にんにく、塩、コショウ を入れて炒める。
3. なす(みじん切り)、ズッキーニー(みじん切り)、かぼちゃ(みじん切り)、トマトペースト、オレガノ、タイムを加える。塩コショウで味を整え、焼き色がつくまで炒める。
4. カットトマトを入れ、弱火で30分ほど煮る。
5. チーズソースを作る。大きめのボウルにリコッタチーズ、モッツァレラチーズ、バジル、パセリ、塩、コショウ 、卵を入れて混ぜる。
6. スライス野菜を準備する。ボウルになす(スライス)、ズッキーニー(スライス)、、かぼちゃ(スライス)、ローマトマト(スライス)、にんにく、タイム、オリーブオイル、塩、コショウ を入れて混ぜ合わせる。
7. 大きさ23x33cmの耐熱皿にトマトソースを敷き詰める。ラザニアを4枚のせてチーズソースを塗る。 その上にスライス野菜を並べる。もう一度、トマトソース、ラザニア、チーズソース、野菜スライスの順で重ねる。
8. オーブンで30分焼く。表面に焼き色がついたら取り出す。切ってさらに盛り付けたら、完成!

1 yellow onion, diced
3 bell peppers, seeded and chopped
6 cloves garlic, minced, divided
salt, to taste
pepper, to taste
1 lb eggplant(455 g), cut into ½-inch (1 cm) cubes
2 yellow squashes, cut into ½-inch (1 cm) cubes
2 medium zucchinis, cut into ½-inch (1 cm) cubes
12 oz tomato paste(340 g)
1 tablespoon dried oregano
2 tablespoons fresh thyme
28 oz diced tomato(795 g)
30 oz ricotta cheese(850 g)
1 cup shredded mozzarella cheese(100 g)
¼ cup fresh basil(10 g), chopped
½ cup fresh parsley(20 g), chopped
1 egg
2 japanese eggplants, thinly sliced
2 zucchinis, thinly sliced
2 yellow squashes, thinly sliced
6 roma tomatoes, thinly sliced
lasagna noodle, cooked
PREPARATION
1. Preheat oven to 400°F (200°C).
2. Add 2 tablespoons of olive oil to a skillet on medium-high heat. Once warmed, add the onion, bell peppers, 4 minced garlic cloves, salt, and pepper. Cook, stirring occasionally, until golden brown and caramelized.
3. Add the eggplant, yellow squash, zucchini, tomato paste, dried oregano, and 1 tablespoon of thyme, and more salt and pepper. Cook until the vegetables are soft and the tomato paste deepens in color and starts to stick to the bottom.
4. Add the diced tomatoes and bring the mixture to a simmer. Cook on low for at least 30 minutes. Set aside to prepare the rest of the lasagna layers.
5. In a large bowl, mix together the ricotta, mozzarella, basil, parsley, salt, pepper and egg. Set aside.
6. To a bowl, add the sliced Japanese eggplant, yellow squash, zucchini, Roma tomatoes, garlic, 1 tablespoon thyme, salt, pepper, and 2 tablespoons olive oil, and gently toss to combine.
7. In a 9x13-inch (23x33 cm) glass baking pan, add a layer of the ratatouille to the bottom. Top with lasagna noodles, and spread a layer of the ricotta mixture, then shingle alternating slices of the marinated vegetables. Repeat with another layer of ratatouille, noodles, ricotta, and on the top shingle the vegetables.
8. Bake for 30 minutes, or until the cheese and sauce are bubbling slightly and the sliced vegetables on top have browned to your liking.
9. Slice and serve.
